March: Vegan-ish cooking

March started with some great and not so great news.  James had been having some intestinal issues...more on that later.  Basically the specialist said that he was allergic to something I was eating, which meant a HUGE diet overhaul for me/us (Brad had/has his own treats).  I've been off of animal products (except for their meat), nuts, and any seafood.  This includes anything made with any of those things...goodbye chocolate, biscuits, pancakes, cheese, yogurt, soup, (did you know chicken bullion/broth has milk in it?!), store-bought bread, basically every staple in my diet.  So I was very, VERY creative in cooking this month, trying to find tasty meals that also had variety, although some of these things we eat every month.  I added links to recipes I used from online.

Lentil Stew
Crockpot Chili - not so awesome
Apricot Chicken with cilantro jasmine rice- we ate this several times
Garlic Arabic Bread, homemade hummus & guacamole, Juanita's chips, and apples - no judging remember?
Spaghetti and vegan garlic biscuits - I added garlic powder
Fried Chicken with roasted potatoes and carrots
Homemade Pesto Pizza - (crust recipe) we had this several times (with garbanzo beans & veggies)
Olive Pinto Noodles- with grilled onions and olive oil (Brad added parmesan cheese)
Chicken Taco Salad
Sweet Potato Cilantro Enchilada Casserole roughly followed (I split it into two & added canned chicken to one)
Pasta Salad with avocado, garbanzo beans, green onions and italian dressing
Roasted Veggies and vegan biscuits

I also made this recipe for vegan chocolate snickerdoodles, because I needed something chocolate.

We are having falafel soon...so we'll see how that goes; it sounds delish!

Also, it took me 7 spellings to get the computer to guess how to spell parmesan cheese.
